Bombay Karachi Halwa or Corn Flour Halwa

Bombay Karachi Halwa or Corn Flour Halwa is an exotic and flashy dessert known for its elasticity. It's prepared with corn flour,sugar, ghee and flavoured with cardamom and dry nuts. A popular and easy sweet recipe prepared especially during indian festivals like diwali and navaratri.

◆Ingredients:

for corn flour mixture:

  • ½ cup corn flour / corn starch
  • 1½ cup water

other ingredients:

  • 1¼ cup sugar
  • 1 cup water
  • 1 tsp lemon juice
  • 4-5 tbsp ghee/butter
  • 10 cashews, chopped
  • ¼ tsp cardamom powder / elachi powder
  • few drops of orange food colour / colour of your choice
  • 5 almonds, chopped for garnish

◆Instructions ( 1 cup =255 ml)

corn flour mixture recipe:

  1. firstly, in a large mixing bowl take corn flour and water.
  2. mix well without forming any lumps.
  3. furthermore, add half cup of more water and continue to mix. keep aside.

cornflour halwa:

  1. firstly, in a large kadai / non-stick pan take sugar add water.
  2. allow the syrup to boil.
  3. pour corn flour mixture into the boiling sugar syrup.
  4. furthermore, stirring continuously on low-medium flame.
  5. once the corn flour mixture starts to boil, and starts to thicken.
  6. immediately add a tsp of lemon juice.
  7. also keep stirring till the mixture thickens completely.
  8. now add a tbsp full of ghee.
  9. and mix continuously till all the ghee is absorbed.
  10. further, add another tbsp of more ghee and continue to mix till it turns glossy.
  11. then the mixture will start turning transparent and silky. releasing ghee from sides.
  12. add food colour, cardamom powder and chopped cashews.
  13. continue to mix till mixture will start to form a lump.
  14. later, transfer the mixture to a tray and level.
  15. also sprinkle some chopped almonds and rest for an hour.
  16. finally, cut to a desired shape and serve.
